Hernández has more than 20 years of experience in the American culinary industry. His "artworks of him" reinvent Asian cuisine and fuse it with Latin flavors to achieve the best recipes.
A lawyer by profession and a chef and artist at heart, Hernández studied law in Venezuela, but once settled in the US, he decided to bet on his great dream of studying culinary art, which he fulfilled with the best: Plaza III Steakhouse, Sysco and others.
Together with his brothers, Daniel and Matías, Edixon came up with Crudos Fusion Art, a restaurant located in the heart of Wynwood, where urban art and good food are the protagonists.
Modern and daring creations such as the Ramen Burger, a hamburger stuffed with meat, goat cheese, spicy mayonnaise, caramelized onions, and bread replaced by noodles (noodles); Crudos Roll, stuffed with prickly pear, tempura shrimp, crab salad, salmon, avocado, yellow pepper, truffle oil, cream cheese, and eel sauce; and the Cloud Pork Belly, pieces of pork cooked for 48 hours with various ingredients where sweet and salty flavors are mixed, are some of the dishes that cause a sensation.

On the other hand, among the drinks, the tropical touch comes from the hand of the Passion Fruit Mojito, which is accompanied by an ice cream palette made, like the mojito, with sugar cane. "The key is not to give up. I confess that due to exhaustion I have been about to throw in the towel several times, and I have said no, I will not do it. This is an exhausting job, but I love it and I like doing it too much, enjoy it. So you have to keep cooking, inventing, and innovating because you can. Everything takes time, but making dreams come true is possible," says Edixon.
